This is available by using the Cron plugin; either download the latest tryout of RStickets! or update your purchased version and you will find instructions in the Configuration tab -> E-mail Settings on how to buy and install the Cron plugin.

I use Google Apps with Thunderbird (IMAP) so I'm guessing I won't be able to use the plugin for converting emails to tickets, correct?

doesn't the cron plugin have to be run on a POP mail box?
