What is the best way to create an override for the Bootstrap color variables in css/master/variables.less?
Changing the bs-color variable definitions here works, but is there a more proper way to create an override for the standard bootstrap colors helper?

You can try to add new styles in a custom.css file which you can create as explained here. This functionality is available for all RSJoomla! templates.
