On the event registration form, when selecting categories, there is a text box to say: Type or Select Some Options

Im using multi language, is there a Constant that I can override it?

Or where can I remove it altogether?

You can try to use the default Joomla! language override to change the constant that controls this particular placeholder, which is:

JGLOBAL_TYPE_OR_SELECT_SOME_OPTIONS
