I need to change the value of a hidden field that gets posted to the admin email

Example
Opt in / Opt out

Depening on their option, i want to change the value of another field (ie choice)
if they choose yes then it will contain an email address and oif they choose no, it will leave it blank

any ideas?

Ive been trying this, but it dont seem to work
