Can I use RSForm to display my user profile (community builder) with the ability to edit the fields?
If yes, how?

Yes, this can be done, but some scripting knowledge will be required. Your scenario has two parts:

1. display the user related data within RSForm!Pro. An example is provided here (it is always a good idea to have a look within the product documentation):

2. update the CB profile. Yet again an example is provided here:

If you don't have enough scripting knowledge to implement this, the RSForm!Pro mapping feature can also be used for the update part:
