TOPIC: Select list email, but email value as option

I have a select list setup to send emails to a recipient based on the selection, but would like the variable in the email to be the visible option.

The option is I am interested in:

email1@domain.com|option1
email2@domain.com|option2

The email is sent to the selected recipient, but the variable in the email is This e-mail address is being protected from spambots. You need JavaScript enabled to view it , but I would like it to say option1.
