If you are familiar with the RSForm!Pro export method, you will notice that there is an intermediary export screen that would allow you to select what fields to be included within the export or not... Your method, would imply that RSForm!Pro should already have some defaults on this. From previous experience, these "defaults" should be configurable.
The simplest method would be to export each form as a separate file. I see an "export all" one click method which would export all forms as individual files to a temp directory then zip all the files and initiate the download of the zip package.
How exactly would you see this working ? Different forms have different fields (thus when exported, different column headers). Not to mentioned that the field count is different.
