I've changed the text of the user email, but the old text is used in the e-mails itself. The strange thing is I can see the new text in the settings of the form, also the example looks ok. Cache is disabled. What could be the reason of this problem?

Hello,

If you're using multiple languages, please make sure that you edit the form in the same language that you're using in the frontend area (notice a language selector in the upper-left corner while editing a form). You can read more information on this topic here and here.
